A Taste Of Brasil – Pao de Queijo Recipe

Pao de queijo – Litterally Bread of Cheese (Chessy bread!) is a very popular snack here in Brasil! It can be found on street corners, in restaurants, cafes, bakeries and shops! People are mad for it here! So why not have a piece of Brasil in your own Kitchen!? Enjoy!

Ingredients – Makes around 8-11, depending on your size!

1 cup whole milk
4 tablespoons butter, melted
1/4 cup vegetable oil
2 eggs, beaten slightly
3 & 1/2 cups tapioca flour + 2 tbsp
1 cup grated farmers cheese, or any firm, fresh cows milk cheese (fresh Mozzarella is a great example)
2-3 tbsp grated cheddar cheese (optional)
salt to taste


Preheat the oven to 350 F. Mix milk, salt, vegetable oil and butter in a pot. Bring to a boil.

When boiled, remove from heat. Stir tapioca flour into the milk and butter mixture.

Stir in the eggs and the cheese – mix well.

Cool mix for around 30 minutes – until able to need. If required add extra flour – normally this is required, but its dependent on the mix!

Flour your hands need to mixture.

With floured (tapioca flour) hands, make dough balls and place on a baking sheet.

Bake rolls for 20 to 25 minutes, until they are puffed up and are golden. They will rise slowly, but wont puff out until the last 5 minutes. Their done when they are full of cracks, golden and have a great smell!

Serve warm for best (and gooey inside!) taste!
